    I think the Zimbra Archive and Discovery does that and more but if you want
    you can implement that in the Zimbra postfix

    Postfix Configuration Parameters

    You might have a look this thread or this one, which I think will do what you want. There is also Zimbra Archiving and Discovery which is the advanced, commercial way to do this and much more.

    Cheers,

    For those who don't like visiting external links the solution is:

    1- Create an account with large quota. i.e: mailuser@domain.com
    2- in /opt/zimbra/postfix/conf/main.cf add the line:
    always_bcc = mailuser@domain.com
    3- Restart zimbra
    4- Login to mailuser acount and from options tab set a filter to discard all messages other than the specific user/s you want to audit.

    NOTE: Step 4 is neccessary because, after setting always_bcc ALL mail trafic is routed to the mailuser account.
