Please read the wiki page, this question is well covered in the documentation

SMTP Auth Problems - Zimbra :: Wiki

It's likely that you have zimbraMtaTlsAuthOnly set to TRUE, so you won't get the auth capability in your EHLO response until you start a TLS session.

I fail to see the issue with this respond. If your "to:" address is for someone in the receiving domain for this server, the server have to accept the message without authentication. This is not open relay. Otherwise you can not receive any email from other mail servers. If your compliant is that the server should not allow the "from:" address being inside of domain to be unauthorized, This is a spam filter issue.

I think you are looking at some spam filter features that can be configured for postfix. However, it is not being turn on by default for the postfix in zimbra.

    zimbra@gbd:~/postfix/conf> zmprov getserver xx.xx.xx|grep Auth
    zimbraMtaAuthEnabled: TRUE
    zimbraMtaAuthHost: xx.xx.xx
    zimbraMtaAuthTarget: TRUE
    zimbraMtaAuthURL: http://xx.xx.xx:80/service/soap/
    zimbraMtaTlsAuthOnly: TRUE

    command test

    ehlo output of zimbra is
