Default Best way to backup a linux server?

Before my Zimbra box goes live. I really would like to make an exact replica of the server using something like Acronis. But to be honest, I have little experience doing this with Linux. My concern is when it comes to LVM's, boot loaders, and all that. I have had a nightmare with that combination.

I have a Tyan server w/ 3 1TB hard drives. 2 are setup with RAID 1 and the third was supposed to act as a spare, but instead it merged the 3rd drive into 1 LVM w/ the other 2 RAID 1 drives. It also then put the /boot on the 3rd spare drive.

What would be the best route for backing this up for some reliable DR? Would acronis or clonezilla be something that could pull this off? Or would my best route be to just backup Zimbra reliably and rebuild the server if the time ever comes.

Make sure you take a full backup of /opt/zimbra and why not use something like G4L ?

I've used Mondo Rescue - GPL disaster recovery solution and quite like it.
