Default Allow some parts of preferences

Within the class of service under the features tab is the option to allow Preferences to be enabled or disabled. Some of the user options that are accessed under preferences are really important to us (e.g. users being able to add their own signature) and some we would never want to allow them to change (e.g. change the from email address).

Is there a way to allow some preference to be accessible to users but not others? The all or none approach seems to be pretty inflexible.

Why not enable/disable the individual things elsewhere?
I don't think that you can disable signatures, but the sending from any address (which is disabled by default) is controlled in the COS -> Preferences tab -> Mail Options section -> Sending mail subsection -> Allow sending email from any address option.
