As a quick update for version 6.0.6 (and newer I am assuming) look for the following in the file name provided by uxbod:
    Code:
    <td class='ZhZimbraTitle'><fmt:message key="zimbraTitle"/></td>
And remove the <fmt:message key="zimbraTitle"/> tag replacing it with whatever you want it to say, something like:
    Code:
    <td class='ZhZimbraTitle'>My Mail Server</td>

That would/should work, of course. But I think that if you really look at it, I'd say that zimbraTitle is actually a key into the message array (collection) that Zimbra builds from the language resources.

If you take a look at the files in /opt/zimbra/jetty/webapps/zimbra/WEB-INF/classes/messages, you will find exactly that string "zimbraTitle", with its value (initially set to Zimbra). Simply replacing it here will only change that very template. If you change the files in the ../messages/ directory, it'll be changed wherever the message key "zimbraTitle" is being used (and it's used in a lot of places).

Zimbra is not very good at handling branding at all -- and I think that's entirely intentional.
