    Welcome to the forums

I presume that IP in /etc/hosts for mail.example.com is your external one ? If so it will need to be the internal IP address instead. As you are behind a firewall/router with NAT you will need to setup a Split DNS - Zimbra :: Wiki architecture so that you have a valid MX and A record on your internal LAN for ZCS.

Please read the Quick Start Installation Guide for the requirements for your /etc/hosts file and set-up a Split DNS so your Zimbra server IP can be resolved. When you've done that correctly, remove the current install with './install.sh -u' (that will remove all of your current install) then re-install Zimbra.
    Regards

    Well done.

Just to avoid any possible pain in the future would you mind posting the output of the following commands (run on your Zimbra server):

    Code:
    cat /etc/hosts
    cat /etc/resolv.conf

    dig yourdomain.com any
    dig yourdomain.com mx

host `hostname` <-- use exactly as you see it and backticks not single quotes
    Regards
