Apparently all parts of the internet are not created equally. I have a potential user going to Sahklin Island in Russia. What are the odds of the web interface being usable over a dial up connection? Would a simple POP3 connection via Outlook be my best bet?Would IMAP be better than the web interfac...

You would use the Admin console to create the domain bar.com
Then when you create a user account, for example user1@foo.com, during that account setup you would specify user1@bar.com as an alias for that user.
This way if a mail came in for user1@bar.com it would appear in the user1@foo.com mailbox.
