You could click on the "To:" button in a new message to bring up the "Select Addresses" window, then hold the Control key while you select multiple addresses from your Contacts.

If you only have two "problem" mailboxes, why not just export them using Outlook into a new *.pst file, run the scanpst repair tool, then use the Zimbra pst importer.
