The relevant attribute is
zimbraAutoSubmittedNullReturnPath
which can be modified via
zmprov mcf zimbraAutoSubmittedNullReturnPath FALSE
. It is still not a good idea to do so though.

For various reasons (mostly to avoid OOO-loops) the OOO replies are sent with the special empty SMTP envelope sender (you should see a from=<> in your zimbra.log) which is probably not allowed by SES. There might be an option to change that but that is generally not really a good idea.I don't th...

good to hear that it was useful to you.
You extracted the two appointments as ICS files before. Could you create a PST file with only the two appointments in question? I'll add them to my suppot case then, that might help fixing the issues.
