7.x is limited in how it detects local email. Disclaimers are only added if the senders ip is within the zimbraMtaMyNetworks. 8.x will have much better support for this including smtp authd clients

Increase Logging Time Frame for mailbox.log File

mailbox.log is automatically rolled on a daily basis via /opt/zimbra/conf/log4j.properties configuration. There is a crontab entry for the zimbra user that delete any of these files older then 8days. So you should already have 7 days worth of data just in separate files.

You won't really need to change much on the zimbra side unless you want outbound email to route through the spam gateway as well.
In which case you can set the zimbraSmtpHost attribute on the domain or global level.
