Sounds DNS'ish to me. From a shell on the zimbra console try "dig mx me.com" and check that you get lots of MX records appear, being able to resolve me.com is not a valid test becuase that's going to be the web server for the domain, not the mail server.

I'd suggest booting the server, on an isolated network if needed and use an email client of some nature to connect to each account to back it up.

It would be the first 50 accounts added to the system but I dont think the license file will actually install if the server is over provisioned; you'd need to delete 50 accounts before licensing it, or buy 100 licenses as Phoenix mentioned.

Zimbra uses lots of memory, 4GB may just not be enough. You dont say how many accounts are active on this server, but that'll have an affect on memory usage.It's also worth mentioning that as you are using a beta verison it's quite likely that it's memory usage has not been optimised...
