Zimbra Email Archiving on Server

My client is interested in setting up email archival in such a way that user mail older than a certain date (say, 30 days) is stored locally on the mail server and viewable/accessible via the Zimbra web GUI, but is NOT viewable/accessible via an IMAP account on a desktop mail client.
I originally suggested HSM, but they don't like the idea that mail is still viewable from the desktop client even when it's stored on the HSM drive.
We're running ZCS Version 6.0.14_GA_2928.NETWORK.

The mail does not necessarily need to be stored on the local mail server, it can be archived/moved to another server. The main question here is: Is it possible to set up email archival in such a way that user mail older than a certain date (say, 30 days) is viewable/accessible via the Zimbra web GUI, but is NOT viewable/accessible via an IMAP account on a desktop mail client?

If you don't want IMAP (or POP) access then just disable those services in the Admin UI.

So it's not possible to globally (or individually on a mailbox by mailbox basis) set Zimbra to tell the user's desktop email client to load some mail from a user's mailbox but not all mail?
