End-user customization of the message background isn't a feature of Zimbra Desktop, so it's not surprising you don't find it in the manual.
That isn't to say it can't be done if you know a little about HTML and CSS, and don't mind getting your hands a little dirty. The easiest way I can think of to do this would be to open Zimbra Desktop in a web browser and use a customizing plugin for the browser. To open in the browser, you'd open ZD, click Setup in the upper right, and then choose the "Open in web browser" link below the account info. Then once you're in the browser, you could setup or enable a customization plugin (ex. Stylish) to write a custom style sheet. Then last you'd just need to figure out the CSS rule to create to modify the message background. It'll probably look something like this:
.MsgBody { background-image: [base64 encoded image here]}
To encode the image, there are a variety of online tools to let you upload your image and have it converted. (ex. Convert images to base64 strings for HTML/CSS embedding)
Hope this helps.
